Historically,
many breweries in the UK were built over boreholes
to ensure a steady supply of water for brewing. Joseph
Holt Ltd, Derby Brewery is typical in this respect,
being located over a borehole in the heart of Manchester.
In 2002, having
contended with the inconsistent town’s water
supply for long enough, Head Brewer, Keith Sheard
approached EWS (UK) Ltd with a view to returning to
the existing borehole water supply. His idea, to ensure
a consistent quality of water for use in brewing.
Keith was also able to demonstrate a considerable
financial benefit to reverting back to the borehole
supply.

water analyses available for the existing borehole
supply EWS (UK) Ltd recommended the following treatment
